Summer Salad
Hey y'all!
I have been gone for a hot minute. Life is absolutely crazy and the last two years have been some of the hardest of my life thus far. I have to say though, life is good and things get better, you just have to get up every day. If you get up, you're still fighting.
I have definitely learned going into my 29th year that I needed to make "me" a priority again. Food, fitness, outdoors, people in my life, and everything else in-between. So, here I am again in my happy place cooking, exploring, and loving life.

I hate to waste food. I see no point in throwing out things we partially used when people are hungry. If you were down to your last meal and someone offered you half of a sandwich you would eat it. We need to stop wasting so much and start feeding people who need it.
Today at my job they provided us lunch knowing that we most likely wouldn't get a chance to step out to get something. We got this amazing Hawaiian food from Chris' Ono Grinds Island Grill, (WHICH IS AMAZING GET A VOLCANO BOWL), and it comes with a side.
I'm trying to be healthy-ish, per usual, so I ordered a side of sweet potatoes. They come soft and amazingly buttery. I couldn't eat my whole bowl and my potatoes I took them home. I had leftover Brussel sprouts, leftover sweet potatoes, and blood oranges I had sliced already for work.
Prep Time: 20 minutes, cooling time 10 minutes
Ingredients:
- Half a bag of Brussel sprouts, cleaned and halved
- Sweet potatoes, cubed
- Blood oranges, cubed
- 1oz unsalted butter
Directions:
I had the potatoes from my meal at work already. Everyone prepares their potatoes differently, but if you can get some from a bomb as Hawaiian place? Do it. Throw your potatoes and your prepped Brussel sprouts into a pan on medium-high heat with the melted butter. Once the veggies start to brown, drizzle the glaze lightly across the pan.
Once you've browned your veggies and everything is mixing together nicely, sprinkle the chili lime seasoning onto the mix. You can make it spicier by adding Sriracha, chipotle, or any other preferred sauce.
I had sliced my oranges like little kid snacks so I just had to removed the peels and dice them. Place the hot mixture into a metal bowl, (gets cold quick), and slice your oranges while you wait for the rest of the ingredients to cool.
Once you've waited about 10 minutes, take out the veggies and fold the sliced oranges into the mix. The whole thing will be a little warm, a little sweet, and a little spicy! Mine was gone in about 4 minutes...
