The Heart & Trotter

Hello beautiful!

Found a chorizo burger today at a rad little butcher shop off of El Cajon Boulevard. The Heart & Trotter is a whole animal butchery that also offers local honey, spices, olive oil, kombucha and various other goods.

We have been looking into getting large cuts of meat, instead of buying from chain stores, so it was cool to check out a local shop that is pretty close to us. I prefer the quality of smaller shops over the old, dyed, chain grocery meats.

This burger could easily be recreated, I think I would add a friend egg when I make it. Chorizo to me screams breakfast, so a runny yolk would definitely add some depth.

This shop is hormone, chemical and antibiotic free which is great. They offer whole chickens that are the size chickens are actually supposed to be. The beef and pork cuts are fresh, no dyes, and the bone broth comes straight from the shop. Any chance to keep garbage toxins out of my system I am all in.

If anyone has butcher suggestions I am always open to them,
