Crispy Oatmeal Pancakes
Hello, hello! So this week I found myself staring at the contents of my pantry and fridge trying to conjure up ideas for something palatable. I could eat breakfast for every meal of every day so naturally that was my go-to option.
On hand all I had for a base were plain oats and two eggs and it turns out that's all you need for hearty, delicious pancakes!
Prep time: 5 minutes
Cook time: 10 minutes
Ingredients:
- 2 and 1/2 cups whole oats
- 2 eggs
- 1/2 teaspoon baking powder
- Water
Directions:
Add the oats and water as if you were going to make regular oatmeal. Before cooking the oatmeal mix in the two eggs and the baking powder to form a thin, even mixture.
To save time, I used the microwave to cook the oats instead of the stovetop. Using this method the oats should only be in the microwave for one minute; if left in longer the eggs harden and the mixture separates.
Once the oats have been cooked, measure 1/4 cup of the mix at a time to spread into chunky pancakes in a medium/high heat pan.
They will be very thick, but because they have been partially cooked the eggs and oats hold the pancake shape. As the edges become golden brown, around two and a half minutes on each side, you can flip the pancake. (The texture of the pancake will not show it's doneness because of the consistency of the batter.)
I LOVE any kind of pancake with peanut butter, honey and a lot of cinnamon!
