Sriracha Mayo Deviled Eggs
I love, love, love deviled eggs. I make them almost every time I make hard-boiled eggs, and because of that I always try and make different versions.
These ones are easy to make and are packed with flavor. They're perfect for snacks, parties, or a barbecue!
These can easily be made paleo and whole30 friendly with vegan mayo and spices to mimic the Sriracha.
Prep time: 5 minutes with all prepped
Cook time for ingredients: 15 minutes
Renders four deviled eggs
Ingredients:
- 2 hard-boiled eggs
- 2 tablespoons Sriracha mayonnaise
- Red pepper
- Yellow onion
- 2 tablespoons paprika
- 2 tablespoons cumin
- 1 tablespoon salt
Directions:
*This is a two part recipe; I sautéed the onion slices and diced red pepper in red curry powder, garlic salt, and EVOO prior to adding them as garnishes.*
Slice the hard-boiled eggs horizontally and remove the yolks. In a small bowl combine the yolks, Sriracha mayo, and spices. The yolks need to be broken down into a smooth consistency so the mixture can be easily spooned into the whites.
Once mixed, use a teaspoon to fill the egg white halves evenly with the yolk mixture. Take a slice of sautéed onion and roll into a flat spiral for each deviled egg and place in the center of the egg. Next, place a piece of red pepper alongside the onion.
Chill, and serve!
Notes:
Jalapeño or any other variety of peppers may be added to vegan mayonnaise to create this recipe in line with vegan, paleo or whole30 diet restrictions.
For less spice, sauté cayenne pepper in the onion/red pepper pan leaving only the garnish spiced.
