Guacamole!
So I have to say it, it's a sin these days to say that you don't like avocado, but I don't.
I know, I know, it's "crazy" but I actually can't stand it. UNLESS I make my own guacamole and I can put it on just about anything.
Trying new different restaurants and usually paying extra for guac I always end up feeling let down by the taste. It usually comes down to one thing on the flavor profile for me.
Salt.
So here is a delicious guacamole recipe I like to whip up for tacos or a party dip or whatever your heart desires. (That includes straight out of the bowl, no judgement.)
Prep time: 15 minutes
Cook time: N/A
Ingredients:
- 3 ripe avocados
- 1 tomato
- 1/2 yellow onion
- Juice of 1/2 lime
- 1 tablespoon of olive oil
- 3 tablespoons of Himalayan pink salt
- 2 tablespoons of black pepper
- 2 tablespoons of garlic powder
- 2 tablespoons of ground coriander
*To add additional flavor and spice, add 1/4 cup finely chopped cilantro and 2 chopped jalapeƱos, seeds removed*
Directions:
Halve the avocados and slice them vertically and horizontally in the skin to form cubes. This creates easier pieces to mash up in the bowl. Use a large spoon to scoop the avocado out into a large bowl and mash with a potato masher.
Once the avocado is broken down to the desired consistency, dice the rest of the vegetables. Use a serrated knife for the tomato and a chef's knife for the onion and dice. Add all of the vegetables to the avocado and mix them together evenly.
Add the olive oil and juice from the lime to add moisture before adding the rest of the spices. Once everything is mixed evenly you can place it in a bowl for serving or straight onto some tacos!
